Oreo Truffles by Jenny Lee

Okay- I know this one is not a meal- but I have had a lot of you ask
for this recipe and there is nothing wrong with having this for
dinner! lol.

Oreo Truffles


1Ib Oreo cookies (not double stuff)
8 ounces cream cheese (room temp)
1/2 teaspoon vanilla extract
1Ib milk chocolate (bakers chocolate)


Using a food processor, grind cookies to a fine powder
Add cream cheese and vanilla extract until thoroughly mixed (no traces
of white cream cheese)
roll into small balls and place on wax- lined cookie sheet
refrigerate for 45 minutes
line two cookie sheets with wax paper and in a double boiler (or
medium/high heat and stirring constantly in a pot) melt the baker's
chocolate
Dip balls into chocolate and with a slotted spoon lift balls our of
chocolate and let excess drip off
place on wax paper
you can decorate with sprinkles, drizzled white chocolate, or mini red
hots
let them cool
store in fridge in an air tight container


A few of these and a glass of wine... perfect for those rare nights
without kids- or fun to make with them, too!
